If you suffer from celiac disease or you have a gluten allergy or sensitivity, you are probably unable to eat regular pasta. If you keep this recipe handy, however, you can take your own fresh gluten-free pasta with you to dinners where pasta is served. Add this to my Recipe Box.

Mix dry ingredients in a large bowl, and place wet ingredients in a medium bowl. Whisk the wet ingredients thoroughly.
2Stir wet ingredients into dry ingredients. Knead with your hands until thoroughly mixed.
3Form the dough into a ball and wrap tightly with plastic wrap. Place the ball of dough in the refrigerator.
4Flour a hard surface--a tabletop or marble counter--with sweet rice flour. Use a rolling pin to roll the dough very thin so that it is nearly translucent.
5Use a pizza cutter to cut the dough into small, long pieces. The pieces don't have to be perfect. If you have one, you can roll the dough through a pasta machine instead of cutting by hand.
6Store the cut dough, covered, at room temperature (the microwave is a good place) until you are ready to cook it. Boil for two to three minutes.
